Short answer

Coen is human by day and a vampire at night. Human Coen uses a sword and rune magic; vampire Coen gains claws, supernatural powers and different movement options. Some NPCs and quests only appear at a particular time, and changing the time of day spends story time.

Day and night change more than combat

The time of day can change who is present, which quests appear and how Coen reaches an area. A missing objective may be waiting for the other half of the cycle rather than another quest trigger.
